Alto Sky Lounge @ Hatten Hotel Malacca

Dining under the sky is always a perfectly memorable experience especially when there are good companions and great wine. It is my first time dining at Alto Sky Lounge, a premium rooftop lounge restaurant and bar located at the 22nd floor of Hatten Hotel Melaka. And I am totally in love with this place! Inside the outlet, you will enjoy the luxurious comforts of the modern interior decorated in warm tones of brown. However, I prefer the al-fresco dining as I get to enjoy a stunning skyline view of Malacca's coastal township under an open breezy setting.

The open bar concept is just perfect for a late night chill!


Offering fine cuisine of Western-Asian fusion, Alto allows diners to tuck in an exquisite gastronomical experience while sipping a mix of creatively crafted cocktails and a variety of fine wines. 


Amuse Bourse
Salmon Fume Boursin Marcotte
Smoked salmon roulade with lemon herbs boursin and balsamic pears

As luscious and fluffy the house bread creations are, nothing compares to the utter bliss one feels when one tastes the amuse bouche for the first time. The moment the soft creamy cheese wrapped with smoked salmon melts in the mouth, it fills the palate with bursting savoury goodness. 


Appetizer
Seared Foie Gras with Coconut Chestnut Puree
Enhanced with caramelized green apple and truffle balsamic vinaigrette

This delectable seared foie gras is the stuff of dreams, composed solely, it seems, to awaken those taste buds. It is the complexity of flavours which I admire in this dish; Each is so distinctive yet combines so well with one another. I especially love the melt-in-the-mouth texture of the flavour-packed foie gras. 


Soup
Sun-God Poseidom Nage Hokkaido Mollusco
Royal seafood soup with coconut cream, scallop, salmon roe and yoghurt

Classic golden seafood soup. A simple yet extravagantly flavoured and creamy broth dotted with salmon roes and a large whole scallop, it's the epitome of soul food for some-- although others may find it a tad rich.

Thai Tamarind Nectar Sorbet

Fish
Atlantis Black Cod in Truffle Abalone White Consomme
Seared black cod on braised daikon with truffle abalone consommé,
baby abalone, tea tree mushrooms and asparagus

After the palate-cleansing sorbet, we are served with the luscious fish sitting on a clear broth of truffle abalone. As for the fish itself, I like that it is soft and fresh with crisp edges. The melt-in-the-mouth texture is beautifully contrasted with the chewy baby abalone.


Beef
Wagyu Beef Scotch Fillet with Asian Truffle Cream Essence and Foie Gras Butter
Chargrilled Wagyu ribeyes, saffron caulipower puree, baby French bean, pickled beetroot and cheese crackers

The most memorable dish of the evening, however, is the premium wagyu ribeye fillet. The lacquered meat is dripping in its own deep-flavoured jus and, punctuated by melty foie gras butter; every bite yielded an exquisite crunch and tenderness. This is certainly something you must try when you visit the restaurant.

Chicken
Citronelle Oriental Roulade
Lemongrass chicken stuffed with chestnut prawn, potato skordalia, asparagus spear,
sesame pumpkin, dried cherry tomato, alla braces sauce.

Next up is the rolled-up chicken, stuffed with crunchy ingredients for a wonderful synchronicity of taste and texture. Those with huge appetite can easily sink their teeth into this hearty main course, as it is easy to slice into, leaving a moist and juicy feeling.

 Dessert
Royale Coffee Walnut Cheesecake
Served with coffee caramel sauce, pandan meringue and summer berries

As a finale, the beautiful golden creation appears-- a show-stopping chocolate hemisphere, magically filled with creamy coffee cheesecake and crunchy walnut bits, beautifully surrounded with fresh berries and swirls of pandan meringue.

The dessert is an eyecandy on its own. I take a bite of the luxurious dessert,
and wash it down with a sip of wine. Disarming indeed.

Petit Four served with coffee or tea

We wash down our meal with a selection of coffee or tea, and then served with the Petit Four-- Bite-sized cheesecake, vanilla coated walnut crisps, macaron and semisweet chocolate bar-- sitting pristinely on a slice of chocolate cake. Sweetness overload for the evening! 


Good food comes hand in hand with great music at Alto. The live band performance certainly heightens the overall experience here, making this a perfect place for mixing business with pleasure.

Verdict:
1. A great rooftop dining experience overlooking the beautiful city skyline.
2. Thumbs up to the unique interpretations of flavours and amazing creations of combining the best from the East and West.
3. An ideal venue for romantic dates and business dinners over good food, wine and music.
