[RECIPE] California Raisin and Walnut Cake

It's baking time again! This time, with California Raisins.

Do you remember my previous recipe for Super Basic Raisin Scones? Yes, it was so easy to make and today I am back with another baking project with my favourite California Raisins. 

You must be wondering why do I love California Raisins so much huh? Well, one thing is because California Raisins is such a highly versatile ingredient when it comes to cooking / baking -  it can be part of your breakfast granola, salad, meat, rice, bread and of course dessert too. 

Benefits of California Raisins

Despite their small size, California Raisins are packed with energy and rich in fiber, vitamins, and minerals. As a natural sun-dried fruit, California Raisins are naturally sweet, with no added sugar. In fact, they are the best raisins in the world due to their superior quality and high safety standards e.g. aflatoxin-free.

Today's recipe sharing is my California Raisins and Walnut Cake! I am sure it will remind you of the classic fruit cake and when I think of fruit cake, it instantly reminds me of Christmas! Since we will be welcoming the glorious festive season soon, what's the better way to celebrate and get into the holiday mood than to make this delicious wholesome cake?

[Recipe] California Raisins and Walnut Cake

Nutty, wholesome and festive-perfect, the California Raisins and Walnut Cake is sure to fill you and your loved ones with happiness. Just one dried fruit - California Raisins - and voila~ a perfectly tasty pick-me-up for both young and old! 

Ingredients:
1/3 cup butter  
1 cup brown sugar
2 cups California Raisins (any brand)
1 teaspoon ground cinnamon
1/4 teaspoon salt
1 cup water
1 teaspoon vanilla extract
2 eggs
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 cup chopped walnuts

Steps:
1. Bring butter, sugar, California Raisins, cinnamon, salt and water to a medium boil for 3 minutes on top of the stove. Remove from stove and let cool. 
2. Stir in vanilla extract. 
3. In a large bowl, whisk together the flour, baking soda and baking powder.
4. Pour in cooled ingredients and mix until ingredients are all wet. 
5. Stir in eggs and fold in nuts.
6. Top with more walnuts, if you like.
7. Grease a 9 x 5 loaf pan and bake in preheated oven at 180°C for 50-55 minutes.
8. Remove from the oven and leave to cool in the tin for 10-15 minutes, before turning out onto a wire rack to cool completely.
9. (Optional) Sprinkle on some powdered sugar on top.

I love how my cake is packed with California Raisins and walnuts as it is a healthy option while satisfying my sweet tooth. Whenever I bake, I try to keep things on the healthier side and you know you just can't go wrong with California Raisins. 

Take a bite, and enjoy the deliciously soft and light cake texture, filled with crunchy walnut and juicy California Raisins surprises. Yummy! This tasty cake is the perfect tea-time treat, or I can even have this with a cup of coffee in the morning. Guilt-free to have another slice of two!
